Effect of Adding Lemongrass Stalks on Characteristics of Herbal Drink Lemongrass - Palm Sugar as a Functional Food

Palm sugar is a product made from the sap of lontar tree flowers. Palmira Indonesia has started to develop palm products in form powder and drinks. If significant, then proceed Duncan's Multiple Range Test. results showed had very significant on scoring test taste attributes, significantly hedonic attributes not color attribute, total acceptance, attribute. best treatment that make lemongrass-sugar drink 10% stalks. panelist's acceptance liked for taste, color, criteria being balanced brown red. also containing antioxidant activity 69.64% IC50 694.50 ppm, dissolved solid 0.52 Brix, characteristic L* 26.9, a* 23.16, b* 37.1 red oxide criteria.
